DIGESTIVE BROWNIES RECIPE

Deliciously yummy treat  using Digestive biscuits,  made from scratch.

Am craving for a dessert that was quick and easy that does not involve a complicated step to make.  So I decided to whip up  this Digestive Brownies.

Since I have a sleeve of digestive biscuits so why not incorporated them in brownies. I crushed these but you can use quartered digestive over the top of brownies batter.  Actually you can use other cookies but stick to this proportion , 1 1/2 cups to be added to the batter and 1/4 cup for topping (quartered or crushed).

Always prefer not so sweet treat so use only 3/4 cup of sugar, Digestive Brownies were so good even my hubby who are not keen having sweet dessert requested for extra pieces.

DIGESTIVE BROWNIES RECIPE
Yield  :   12-16 brownies

1/2 cup flour
1/3 cup cocoa powder
1 tsp vanilla essence
3 medium eggs
1/2 tsp baking powder
1/4 tsp salt
1 cup  white/brown sugar
1/2 cup melted butter
1 3/4  cups crushed Digestive divided

METHOD

Preheat oven at 180 C and grease  8 x 8 in pan.

Whisk together flour, baking powder, cocoa and salt.

Whisk butter, sugar and vanilla until well blended.  Add in egg one by one,   whisk after each addition.

Combine butter mixture with dry ingredients.  Add in 1  1/2  cup of crushed Digestive.  Stir until well  mixed.

Pour batter into prepared pan, level top and sprinkle the balance of crushed Digestive over top of brownies batter.

Bake for 25-30 minutes or until a skewer inserted comes out clean.

Leave in pan for 10 minutes, invert on the rack to cool.

What a creative recipe idea using favourite cookies. It seems like there are a variety of cookies that could be incorporated in a recipe like yours. It's really got me rethinking the classic 'brownie' :)
