CHUNKY TOMATO SOUP

Nothing beats slurping up a bowl of warm tomato soup that is super easy to prepare from your own kitchen.  It tastes so much better than the store bought versions.  Transform this soup with a little twist by adding some of your favorite herbs or spices. Try making it thick or thin, chunky or smooth, the way you love them  most.

My method involves  a quick and much easier way  eliminating the blending process but this is a personal choice. I prefer my soup in its original state, love to bite into a chunky bit of tomato in them.

Have added  some chili powder for extra hotness also for  its  beautiful color. This can easily be replaced with freshly ground black pepper if the chili powder isn't available in your kitchen.

BRAIDED APPLE BREAD



This braided  bread looks insanely good yet  really easy to make.  You can use any sweet dough  or dinner rolls recipe for making this braided bread.  It can be shaped according to your preference but most common shape is simply an oblong loaf.  They can also be knotted or twisted into complex shapes.

The dough used in braided breads vary. Some are rich with eggs or butter and they may be brushed with egg for a glossy finish.  They can also be mixed with raisin, nuts, dried fruit or spices for added flavor.

Feel free to choose your own  filling by substituting with your favorite jam or preserves. The stuffing can be made  either sweet or savory too. Before adding more brown sugar to the apples, have a bite to see whether you need extra dose of sweetness, it all depend on apple you'd use.


BRAIDED APPLE BREAD
Yield   :     2 loaves

2 cups all purpose flour
1 tablespoon sugar
1/2 tsp salt
1.5 tsp instant yeast
2  tablespoon melted butter
2/3 cup warm milk

FILLING

3 medium apples peeled and thinly sliced
3 tablespoons brown sugar or to taste
2 tablespoons all purpose flour
2 tsp lemon juice
1 tsp ground cinnamon



METHOD

Place flour, sugar and  instant yeast  in a mixing bowl.

Combine milk, melted butter and salt, stir until well incorporated.

Gradually add milk mixture to the dry ingredients and forms into a soft dough.

Transfer onto floured board, knead by hand for 8 minutes until smooth.

Place dough into oiled and covered bowl, let rise until doubled for 1-1.5 hours.

While the dough is rising, prepare the filling. Combine all ingredients in a small bowl. Reserve the filling until ready to fill the braids.

Punch  down  dough, divide into 2 balls. On floured board, roll each ball into rectangle about  1 cm  thick , keep the the other half  covered.

Spread the filling in the center of the dough, leaving 1.5 in  free on all the sides of the dough. Using pizza cutter, cut 1 in strips along the sides , making sure both sides have same number of strips.

Beginning on the left, lift the strip across the filling diagonally. Repeat the same with other side of the dough so that  the 2 strips crisscross each other to form into a loaf.

Repeat the rolling, filling and braiding steps for the  second  piece. Rest the dough covered for 45 minutes.

Preheat oven @ 190C, bake the loaves for 15-20 minutes until golden brown. Immediately brush them with melted butter after removing from the oven.

Leave to cool on the rack for 15 minutes before serving.

Chewy  and wholesome, this Healthy Breakfast Bars make a super satisfying snack. They bake up in a snap without leaving home.

These bars were delicious and not too sweet. If you desire, you can add some brown sugar to sweeten them up a bit They were  perfect to my liking so it really didn't need to be any sweeter. It is  great for those  with food allergies since there is no wheat, butter  and egg  in the recipe.

A fantastic  dish  that offers almost a complete meal using moong dal and rice. There are various ways to cook them. some added ground pepper or other spices as well.

This recipe was perfect. My family raved about how good it was. Perfect blend of seasonings comprise of mustard seeds, whole cumin, ginger and chili powder makes this rice so appetizing that you can eat them without any gravy. I honestly didn't expect them to like it so it was a great surprise! Even the color made it fun for them to eat.

GARLIC NAAN

A  staple in most West, Central and South East Asian countries . Naan has also become popular in other parts of the world  especially in Arab states, Europe and North America. This  leavened flat bread  is cooked in tandoor by most North Indian restaurant around the globe.

Since tandoor is unavailable in most homes, the best alternative is  to bake them  in an  ordinary oven or stove top.  Naan comes in different flavors, by varying the toppings.

The recipe below uses only 3 cloves of garlic but you can add more if desired and  I have  cooked  them over the stove top without any topping.  If  topped with  one of the following, cilantro, sesame seeds, nigella seeds, chopped onion or minced garlic, it certainly  improve. the flavor. Below are a few tips for perfect naan:

1. Roll out each naan about 1/4 in thick and not very thick. It will expand during cooking.

2. Cook each naan on preheated cast iron skillet or heavy bottom  pan  using medium heat.

3. Rotating the naan using your hand or with the help of folded dish towel ensuring even cooking.

4. Flip the naan more than once to obtain nice golden color.

Chewy, tender and absolutely delicious paired with spicy gravy.  My son gulped all 4 pieces at one sitting!

A crostata is an Italian version of a free-form tart, it is called galette by the French. I had used apples as the filling but you can use any other fillings either sweet or savory.  The crust can be made using  food processor or by hand.

It is not difficult to bake one. Here are the tips to make a perfect pie crust:
  1. Butter  and water should be ice cold
  2. Handle the dough as little as possible. Overworking the dough will make it tough. 
  3. Gradually add  enough water to form into a  pliable dough. It must sticks together and not crumbly.
  4. Refrigerate the dough before rolling out 
  5. Prepare the filling 10 minutes  before removing the dough  from the refrigerator.
The following recipe produces a flaky and tender crust that is so easy to handle. It turns out perfectly every time!

FRUITED PULL APART BREAD


Treat your family with this sweet treat  made from scratch. Bake  with sweet yeast  dough, coated with butter, brown sugar and chopped nuts that's certain to satisfy.

Oozing with warm caramel and nuts, this makes a great breakfast or serve as a special treat for your family and friends.  The sticky and finger licking bread  is best eaten warm. It is well worth the bit of extra effort.

FRUITED PULL APART BREAD
Yield   :    8-10 servings

DOUGH
2.5 cups all purpose flour
2 Tablespoon sugar
2  tsp  instant yeast
4 tablespoons butter melted
1  tsp salt
1  cup warm milk

TOPPING
1/2 cup brown sugar
1/4 cup raisin/dates/cranberries
1/4 cup chopped almond/pecan
3 tablespoons butter melted


METHOD

Combine butter, warm milk, sugar and salt in a small bowl.

Place flour and yeast in a mixing bowl.

Gradually add milk mixture to the flour, forms into soft dough.

Transfer onto floured board, knead by  hand or mixer  until smooth.

Transfer dough into oiled and covered bowl, let rise until doubled for 1-1.5 hours.

 Generously grease 8 in round pan, sprinkle a tablespoon of brown sugar in a greased pan.

Combine remaining brown sugar, dried fruit, melted butter and nuts into a large  bowl.

Gently punch the dough down,  pinch the dough into 1.5 in  balls.

Drop the balls into brown sugar mixture, toss to combine. Arrange evenly in pan, sprinkle remaining nuts and fruit over top.

Cover and let sit in the pan  for 45 minutes. Towards the end of rising time, preheat oven @ 190C.

Bake for 15-20 minutes until golden brown.

Let sit in the pan for 10 minutes, loosen the edges before inverting onto a serving platter.

Serve warm.

DATES & CORNFLAKES COOKIES


These Dates and Cornflakes Cookies are healthy and low in fat. They  are wonderfully  tasty, crunchy and crisp.  It  can  be made easily and enjoyed with a cup of tea.

Made with dates and conflakes but  if you are not a fan of dates, feel free to swap with sultana or apricot.

Let's check out the recipe:

DATES & CORNFLAKES COOKIES
Yield    :   20-24 cookies

70g  butter softened
1/2 C self rising flour
3 tablespoons brown sugar
1/2 C chopped dates
3/4 C crushed cornflakes


METHOD

Cream butter and brown sugar, add in the rest of the ingredients.

Pinch dough and shape into small ball, lightly  flatten them.

Place the balls onto baking sheet.

Bake until golden brown for 12-15 minutes @ 160C.

Transfer onto rack to cool.

Store in an airtight container when completely cool.

SAVORY ONION CORN BREAD


If you're looking for quick, easy and delicious bread this recipe is what you should try. It was  sweet and spicy also a great make ahead meal or a good finger food.

Combination of creamed corn and spices blended so well to create a  flavourful  and  satisfying  bread, you will not be able to stop eating.. In fact I have hidden certain portion just for a photo shoot before it was eaten up. 

Sauteed onion and vegetables keep them light and savory. Addition of chili powder really jazz up this quick bread but it can be replaced with freshly ground black pepper. I used curry leaves as i didn't have parsley. Perfect recipe for changing around and adding whatever it is you fancy. All the family were very impressed!

SAVORY ONION  CORN BREAD
Yield    :   9 servings

1 C  all purpose flour
1 C  whole wheat flour
1 big onion chopped
3  tablespoons  butter
1/2 C  cubed carrot
5 florets broccoli thinly sliced
1 C  cream style corn
1 C  evaporated milk
2 tsp chili powder
1/4 tsp turmeric powder
1 tablespoon torn curry leaves//parsley
salt to taste
red chili sliced for garnish


METHOD

Melt the butter in a flat pan, saute the onion until soft, add in carrot, broccoli, chili powder, curry leaves, salt and turmeric. Stir for 1 minute, remove from heat.

Preheat oven @ 190C, grease 8in pan.

Whisk together milk, salt and creamed corn.

Combine corn mixture with flour, whisking together to mix thoroughly, spoon into prepared pan. Sprinkle with fresh red chili and curry leaves.

Bake for 30-40 minutes or until a skewer inserted comes out.

A sweet yeast pastry form Czech normally stuffed with either sweet of savory filling. It is quite time consuming  to make but  worth your effort.

Adjust the sweetness that please  your palate, all depend on what  type of apple you've used. I like to experiment by adding different flavors to the filling.

This dough won't rise much but you can proceed to bake after rising time, it will puff slightly during baking.

This is an easy recipe that makes a great looking cake. Kids just love it.   It uses the ingredients most likely you already have in your pantry, without a special trip to the shop.

I didn't even use a mixer, just stir the mixture with a wooden spoon. It was low in fat and also egg free. The classic pairing is chocolate and vanilla but there are so many more possibilities. This is my new favorite cake, it turned out wonderfully,  very moist and  tasty!

SPRING SOUP


I was in love with this soup when I saw it on a television show recently, I know my family will surely love them.

Spring soup cooked with your choice of vegetables with a bit of onion and seasoned with freshly ground black pepper makes a refreshing, surprisingly hearty meal.

An addition of milk will soften and enrich the soup To jazz up this soup you may add a dash of hot sauce, some shreds of cooked bacon/ chicken or a sprinkle of fresh chopped herbs like parsley or thyme.

SPRING SOUP
Yield :   6-8 servings

2.5 cups mixed vegetables (carrot, french bean, cauliflower)
2 onion chopped
2 potato mashed
6 cups water/stock
1 TB all purpose flour
2 TB olive oil
1 cup milk
salt to taste
fresh ground black pepper
4 TB grated cheese (optional)


METHOD

Heat  the oil in a deep saucepan, add the onion, saute until translucent.

Add in mixed vegetables, stir for 2 minutes, add 5 cups water and bring to boil. Simmer until vegetables are tender. Mix flour with the balance of water, make sure there is no lump..

Now mix in mashed potato, milk and flour mixture,bring to a slow boil.

Season with black pepper and salt, when ready to serve, ladle into bowls or mugs, top with  grated cheese.

Savory Hand Pies

Hand pie is an individual serving of a  buttery and flaky pastry stuffed with either sweet or savory filling. This also makes a great portable snack during  picnics or small gatherings.

They are so versatile that you can use your leftover chicken, meat,  veggies or even fruit preserve  as their filling. Hand pies  can be make well in advance and stored in the freezer.

It is so much easier if you grate the hard block of butter rather than to wait until you are able to cut them up. This way, it is easily incorporated to form a dough.

If you don't feel like messing with  veggies, you can opt for frozen mixed vegetables. It works great.

NUTELLA YEAST BREAD


A little twist to our regular yeast bread. This Nutella Yeast Bread  has mashed banana and nutella spread in it.

So easy to prepare and doesn't require kneading at all. What you need is a mixing bowl to combine and let it rise for about an hour before baking.

It  rose almost double when baking so make sure to use deep baking pan.  They turned out beautifully. Everyone loved it!

NUTELLA YEAST BREAD
Yield    :     8-10 servings

1 1/2  cup all purpose flour
1  cup mashed banana
1/2  cup  brown sugar
1/4  cup melted butter
1 1/2 tsp instant yeast
1/2  cup nutella
1/4  tsp salt
1/4  cup milk


METHOD

Grease your 8 in deep cake pan.

Combine flour and yeast in a mixing bowl. Add in brown sugar and salt. stir well.

In a small bowl, whisk nutella, melted butter, milk and banana.

Add nutella mixture to the dry ingredients, fold  until well incorporated.

Pour mixture into prepared pan, let rise for an hour. Toward the end of raising time, preheat oven @ 175C.

Bake for 30-35 minutes or until a skewer inserted comes out clean.

Cool in pan for 10 minutes, transfer onto rack to cool.

Cookies are one of my family favorite tea time snacks. They are quick to make so does this Eggless Nutella Cookies. It is an easy recipe and  does not require chilling. The tasty combination of cookies dough with delicious nutella make them a yummy snack any time of the day.

They are healthier and make you fully satisfied.  I had used whole wheat flour and very low sugar but this is entirely up to you. The dough is so great to work with. If they are crumbly, add a tablespoon or two of milk. Roll the the dough by hand to get smooth ball then flatten slightly and top with almond flakes or other nuts  you have on hand.  They turned out amazing, crunchy outside but soft inside. Totally addictive!

VEGAN SWEET ROLLS


A fluffy and amazing rolls that can be shaped in many ways. The dough is so great to work with. I turned them into a roll  stuffed them with  thinly sliced banana and chocolate chip. Unlike the regular bread rolls, I didn't slice them before baking but bake them as a loaf.

Within an hour, it is well risen and  baked beautifully.  The rolls were incredibly  well received, compliments all around.  A sinful combination and so light!

VEGAN SWEET ROLLS
Yield      :   10 rolls

2  C  all purpose flour
1 1/2 tsp instant yeast
3 TB  vegetable oil
3/4 C  warm water
2 tsp sugar
3/4 tsp salt

FILLING
2 TB  melted vegan butter
1/2 C  chocolate chip
2 medium banana thinly sliced
2 TB brown sugar


METHOD

Combine  flour,  yeast,  sugar and salt in a mixing bowl.

Mix in oil and warm water, forms into soft dough.

Knead by hand for 5 minutes until smooth.

Transfer into oiled and covered  bowl, let rise until double for about an hour.

Punch the dough down, roll out into 11 x 13 in rectangle,  spread with melted butter, sprinkle brown sugar,  thinly sliced banana and chocolate chip.

Starting with long edge, roll  up dough,  pinch seams to seal  and place onto baking sheet.

Let rest for 45 minutes. Towards the end of raising time,  preheat oven @ 180C.

Bake the bread for 25 minutes until golden brown. Brush with vegan butter.

Transfer onto rack to cool. Slice while still warm.

This is a light and easy to make brioche recipe. The whole process is considerably shortened by eliminating  the sponge,  preliminary rising and chilling the dough. You can even use your bread maker to bake one.

Without much hassle, this dough turned just amazing as regular brioche but with less butter and without egg.  If you don't have  a brioche pan, the other alternative is to use your muffin cup,  they came out perfect!

This homemade milk coffee bun is a wonderful addition to any meal,  they are simply awesome with a cup of coffee or tea.  These buns  are topped  with evaporated milk and granulated sugar for the perfect crust. The instant coffee adds in some wonderful flavor and the smell is pretty enticing while baking.

Eaten warm from the oven, the inside is perfectly soft with its sugary crunch.  This recipe was incredibly easy, packs quite a big taste and leaves you feeling satisfied. Serve these buns as an extra special  breakfast or scrumptious afternoon snack.

MINI SAMOSA

Samosa is a deep fried pastry stuff with savory filling, normally triangular in shape. It is either filled with spiced vegetables like potato, onion, peas or non vegetarian version with ground beef or chicken.

This is a light snack sold in restaurants or  by street vendors on pushcarts. They make an easy snack or great party finger foods serve during informal family meal or buffets.

Am  bit skeptical when I first saw this recipe  using  raw cabbage as a filling for samosa. So anxious to know how the taste  will be. This is my first trial making samosa with uncooked veggie.

Though it involves a lot of time to prepare especially shaping and frying, these are remarkably  appetizing and gone in seconds immediately after I had fried them. Will be making them again since my son really loves this samosa.

DATES BREAD (EGGLESS)


Dates bread  is the easiest  loaf  of  yeast bread you will ever bake. This recipe produces a soft crust and moist center using the most basic ingredients that can be found in most kitchens.

Instead of raisin, I had used chopped dates and this is also an egg free recipe. The dough is easy to handle and it takes about an hour and half to rise. This bread is wonderful. It smells so good while baking. The texture is perfect and just a right size for my family. It is a favorite bread for many families because it can also be eaten as healthy snack

DATES  BREAD (EGGLESS)
Yield    :   One loaf
Adapted from here

2 C  all purpose flour
1+1/2 tsp instant yeast
1/2 C  chopped pitted dates
2 TB  butter
2 TB brown sugar
3/4 tsp salt
1/2 C hot milk



DIRECTION

Combine dates, butter, brown sugar, salt and hot milk in a  bowl.  Stir to dissolve the sugar. Let mixture cool to lukewarm.

Stir in flour and yeast, forms into soft dough.

Knead by hand for 10 minutes on floured board.

Transfer onto greased and covered bowl, let rise until doubled about 1 1/2-2 hours.

Punch dough down, shape into a loaf and slide into loaf pan. let sit for 45 minutes. Towards the end of raising time, preheat oven @  190C.

Bake for 25 minutes until golden brown.

Transfer onto rack to cool.

BANANA BROWNIES (EGGLESS)


Another great way to use your ripened banana. These banana brownies are egg free and lower in fat than the traditional one. These are perfect dessert for picnics, potlucks or after school snack. But if you have  chocolate lovers in the house, these brownies won't last that long.

The mashed banana does wonder to this easy dessert.  Amount of sugar needed is much reduced by adding those banana and keep it so moist. It has both the perfect texture and ideal rich chocolaty flavor..

BANANA BROWNIES (EGGLESS)
Makes  9 x 9 in pan of brownies

1 1/4 C  all purpose flour
3/4 C  brown sugar
2 TB  unsweetened cocoa
1 tsp baking powder
1 C  mashed banana
1/2 C  low fat milk
1 tsp vanilla extract
1/2 C canola oil
1/2 C   chocolate chips
1 tsp salt



DIRECTION

Sift the flour, cocoa and baking powder in a mixing bowl.

Preheat oven @ 180C and grease 9 x 9 in square pan.

Combine milk, oil, salt and banana in a small bowl.

Now add the wet ingredients to the flour mixture, stir to combine.

Mix in the chocolate chips and vanilla extract, pour into prepared pan. Bake for 35-40 minutes or until a skewer inserted comes out clean.

Cool in the pan for 10 minutes, transfer onto rack to cool.

Cut into squares to serve.

YEAST PIE CRUST

Yeast Pie Crust

Hi friends, wishing you much happiness and success in 2012!

This is a recipe I found on the internet and did a bit of tweaking. If you want to try an alternative pie crust, try this recipe using yeast. This looks and tastes just like normal pie but less buttery of course.

I had halved the recipe, turned the crust into mini pies using 3 in round cutter instead of one large pie. Feel free to use any filling of your choice but now had stuffed them with fruit preserves. Be careful not to overfill as the jam will spill out when hot and burn.  These are so cute and great for serving your guests.

This pie crust is so easy to handle and bakes beautifully. I should make them again and vary the filling with blueberries, cherries or chocolate next.
