Bingka Roti - A baked dessert using bread slices, eggs, milk and plain flour that was firmer and easy to slice.
I have a few slices of stale bread lying on the counter. To rescue those bread am making a bread pudding or Bingka Roti.
This Bingka Roti was slightly different from my earlier bread pudding recipe. as it was firmer and easy to slice due to addition of plain flour.
You can choose other add ins such as sweet corn, jack fruit or banana. Also instead of milk, opt for coconut milk instead.

Yield : 8 servings
6 bread slices
2 3/4 cups evaporated milk
3/4 cup sugar
1 tsp vanilla essence
3/4 cup plain flour
1/3 cup raisin
Cut bread slices into bite sized cubes or tear into pieces with your hand.
Beat sugar, eggs and vanilla essence with a whisk.
Mix in flour and milk, whisk until no lumps.
Add in bread and let soak for 20 minutes.
After 20 minutes preheat oven @ 180 C and grease 9 in cake pan.
Pour bread mixture into prepared pan, scatter raisin on top and bake for 40-50 minutes or until a skewer inserted comes out clean.
Transfer the pudding to wire rack to cool completely. Slice to serve.
