FRUIT CORNFLAKES BARS RECIPE

A combination of cornflakes and dried fruits makes these bars a wonderful treat.

It has been awhile I made breakfast bars.   Since my cornflakes are sitting idly in the cupboard. it is the right time to turn them into a delicious grab and go slices.

These  Fruit Cornflakes Bars  are so versatile, there are so many variations you can made from it.  Either add  fresh or dried fruit when mixing them,  I used  1 cup dried grapes and  1/4 cup of fresh blueberries or use a total of one and quarter  cup of fruit you have in hand..   You can even add chopped nuts like almond, walnut or pecan too.

These chewy, tender Fruit Cornflakes Bars are packed with tasty ingredients.

FRUIT CORNFLAKES  BARS
Makes   12-16 slices depending on size

1//4  cup butter melted
1/4  cup plain yogurt
1/2 cup brown sugar
2 large egg
1 tsp vanilla essence
3 cups cornflakes roughly  blended
1 cup dried grapes/dried fruit
1/4 cup blueberries


1.  Preheat oven @ 180 C and lightly grease 8 in cake pan.

2.  In a small saucepan, heat butter and brown sugar until butter is melted.  Pour mixture over cornflakes, stir to combine.

3. Whisk together  egg,  yogurt  and vanilla essence until well combined.

4. Add egg mixture over cornflakes.  Fold in  dried grapes and lueberries   Stir well.

5. Scoop the mixture into prepared pan,  spread evenly. lightly press them with your finger.

6. Bake for 30-35  minutes or until a skewer inserted comes out clean.

7. Cool in pan for 30 minutes before slicing.

Sounds like a wonderful snack, something I can bake and bring with me to the office. And since my son loves cornflakes, maybe he'll take to it as well.

Hi Nora, I had a box of cornflakes near expiry date in my kitchen cupboard,so I tried out your recipe, which turned out great. Only thing I did different was to use a rectangular tin. Thanks for sharing
